Today I will be teaching us on how to make my Native Stew it's called Ofe Akwu.
Ofe Akwu is a meal made from palm fruit, and due to some ingredients used in the preparation, Ofe Akwu Is said to be helpful to the body, it's also known as (Banger stew).
Now we will be looking at the ingredients necessary for the preparation of this soup.
*Palm fruit (Banger)
*Meat ( Goat meat or Beef) but personally I prefer goat meat.
*Black fish
*Crayfish
- Dawa dawa. Seriously I don't know the english name for it but just have the clue that it's black and flat in look.
*Fresh pepper
*Banger stew spices and your cube. I love kno cube - Ewuru
- N'chawu(scent leaf)
HOW TO PREPARE
*Wash your palm fruit with clean water then cook till it soft enough to pound. While it boils take time to wash your meat and black fish.
Bring down the palm fruit after it's well cooked, then you place your Washed meat and black fish on fire, add your seasons, salt, crayfish, onion and cube, allow to boil. Don't bother adding water cause it produces it's own water, and you stir.
Pound your palm fruit and squeeze out the oil moistures from it into a pot to the quantity you want.
Allow the extract oil to boil, before you add other ingredients. Once it boiled add your meat and black fish, your seasons, cubes, crayfish, onion, Ewuru powder and blended dawa dawa, fresh pepper, and some salt. Cover and allow to boil making the ingredients circulate and then stir for proper mixture.
Now for the scent leaf, personally I love blending some and slicing some. I believe once it's blended it gives the stew much taste and nice smell.
Addition of the scent leaf is the last thing to do, and guess what? It's ready for munching.
Aaah I'm salivating already, smells nice wow you really need to taste this.
