Braai (Barbecue) boerewors (Sausage) Beer and Rugby, that's South African way of relaxing and an excuse to celebrate a special occasion.
Well! being Fathers day yesterday; and it being a beautiful sunny day, we had a "Ox Tail Potjie" the chef being my son in law Eric.
We had a wonderful day with family, being careful of cause with covid-19 rearing it's ugly head.
While the boys went for a surf in the sea at Umhlanga, Eric prepared the Potjie, a "Potjie" is one of our traditional out door entertainments. It is a stew cooked in a three legged cast iron pot out doors, it originated with our fore-fathers the Voortrekkers and has been passed down from generation to generation. Each one having their own unique way of cooking the food, there are many different recipes for the potjie, like fish or chicken or even baking bread in it. The number of rings on the pot equal by the size of the pot, for example , the size 3 pot has 4 rings on the outside, therefore it can hold 12 servings of your home made favorite food.
Ox tail takes around five hours to cook over a well checked fire, so a lot of chatter and drinking beer goes on for almost the whole day, a lovely time to catch up on family gossip. Lol.
INGREDIENTS
- 2kg Ox tail meat
- 500grm packet rashers of bacon
- 2 large onions
- 1 tablespoon crushed garlic
- 1 Tablespoon tomato puree
- 1 packet onion soup
- 8 Carrots
- 12 small potatoes
- Salt and Pepper to taste
Potatoes and carrots in bowl of water waiting to be used.
Pour sauce into pot with oxtail and bacon let it simmer for around 3 hours until meat almost falls off the bone, keeping an eye on the fire so meat doesn't burn.
