Tassie can be great for next level free camps. On the east coast we pulled in at Mayfields, just near Swansea and Bicheno, and finally lucked out on a great park up right across from the ocean where you can see Freycinet Peninsula stretch across the horizon line. It doesn't get much better than this!
After drying out our clothes from the rain the day before, and a good night's sleep (it rained again!) we woke up to blue skies and paradise. First things first was a beautiful swim. So far we have only missed one day! Incredible, incredible, incredible.
Then Jamie got to fishing, catching us a flathead. Flathead are great eating - not many bones and a really mild, firm fish. It's a solid fave for most Aussies and you can find them in fish and chip shops alongside barramundi, whiting and flake. Funny, we were talking to a guy from Oklahoma the other day who said he didn't like our fish and chips. Guy was tucking into a big greasy burger so we didn't really take offense. Clearly he didn't know what good food was ;)
I love how camping often means making do with what you have. I have most things in my kitchen but sometimes you have to get creative with what little you have left before the next shop. This time this meant softshell tacos (they store really well and last longer) with a coleslaw of grated beetroot, grated carrot, spring onion, red cabbage and chipotle mayo. Honestly I think this is my new fave slaw!
The flathead was filleted and washed, and rolled in some flour in which I had mixed a generous shake of ground garlic powder (a must for camping), some smoked paprika and cummin, and salt. I fried it in olive oil til crispy. Soooo good.
I also had some jalapeno dip which went really well with the flavours I already had. Seriously, they were amazing.
If you're headed up the east coast, try to time in so you get into this free camp first thing in the morning when you are more likely to get a camp. It's definitely worth it and I think much better than some of the other camps up the east coast. There are no bins and no water, but there is a toilet block which is handy.
Okay I'm off for a walk along the beach and another swim, and to see if Jamie has caught more fish for dinner yet.
With Love,
