In The Promised Land the forest bless us with so many kind of mushrooms.
We love going in the forest, smell the humidity in the atmosphere after some days of rain and beautiful mushrooms pop in up everywhere.
Contemplate the symbiosis they bring in the woods.
Today I want to share with you this beautiful ejemplar Parasol Mushroom, Macrolepiota.
The one of the picture was found last year in the forest of Bulgaria between August and November in an elevation of 1000m.
Once in France we saw people coming out from the forest with basquets full of Parasol. For that period we were unexperience with maybe a bit of fear of not knowing if its good to eat. Then we ask some locals that explain us that on the edible Parasol the ring around the stem is movable.
We start searching for them and they appeared all the time during our travels.
Letting go of the fear for wild mushrooms and 3 year after is probably our favourite mushroom.
We enjoy cooking them in cream sauce, sautée with veggies and dry for the winter time.
The stem I also dry it for using in soups.
