Today I will make purple sweet potato Bakpao, because the color I get is the natural color of the sweet potato itself so I don't add coloring to the dough, everything is natural without any artificial sweeteners or food coloring. And making these Bakpao is very easy, even though we don't have the right measurements, but I never fail to make these Bakpao, the only tip is to use yeast which is adjusted to the amount of flour.
The ingredients I use to make these dumplings are:
1. 250 grams of wheat flour (I use high protein wheat flour here, but there's no need to worry because I always succeed in making any grade of wheat flour
2. Purple sweet potato
In this recipe I use 2 purple sweet potatoes weighing around 200 grams, but in the picture there are yellow sweet potatoes, because I want to boil them to eat them just like that so to save time and gas I just boil them.
3. ¼ tablespoon instant yeast (I use 2/4 tablespoon instant yeast because I only use 250 grams of flour, but if we use 1 kilogram of flour then I will use all 1 sachet of instant yeast.)
4. Palm sugar. (This palm sugar is used to fill the buns, you can replace it with other fillings according to your taste, for example pineapple jam, peanuts and so on)
5. Pineapple (using pineapple pieces is also your choice, you can replace it with something else.
How to make :
1. After cleaning the sweet potatoes, peel them and steam the sweet potatoes until soft, you can also boil the sweet potatoes. However, this time I didn't do it because at this time I was also boiling yellow and purple sweet potatoes at the same time. When I boiled the yellow sweet potato it turned purple when contaminated by a stronger color.
2. Then, after the sweet potato is soft, mash the sweet potato and add wheat flour and add ¼ tablespoon of instant yeast, knead slowly until the dough is mixed evenly and becomes smooth, add water little by little so that the dough is not hard and becomes soft. Once the dough is soft, let the dough rest for 30 minutes so that the dough becomes fluffy. However, during the process of making these buns, I left the dough for up to 1 hour because I was sleeping, friends..ha..ha..
3. After 30 minutes or more, take the dough little by little, then flatten it and add the palm sugar and pineapple pieces, then cover the dough again and then make a fist until it is smooth and slightly round, repeat this step until the dough is finished.
4. When you are going to shape the buns, first heat the steamer over medium heat so that when the bun dough is finished making the steamer is also hot, so that when the dough is finished it can be steamed straight away.
5. Steam the buns for approximately 10 minutes
6. The Bakpao can now be served.
