Eating something light to bed π has been one of my secrets in staying in shape especially after a heavy lunch during the day. And in my todayβs recipe, I share with you this quick and easy spiced egg with plantains that I had last night to bed . One meal that is light but at the same will keep you filled till breakfast π³ the next morning.
One thing we should know about eggs π³ is that its a supplement that is so filling with any snack π© or meal that is combined with, so when we are adding eggs to meal, we should always pair a smaller amount of the other foods as not to make it excessive.
Spiced fried eggs can be so delicious and one we can enjoy it with bread π, boiled potatoes, vegetables, French fries π, potatoes chips and this sweet fried plantains. Always a quick and easy breakfast, lunch or dinner. And one less expensive food we can always have in our list when going groceries.
Below, I share the step by step process of this quick light dinner.
INGREDIENTS: (one serving)
1 medium ripe plantains
1 large cherry tomatoes
1/2 of a large onions
1 large fresh orange pepper
1/4 teaspoon of salt to taste
1 large fresh egg
1:4 cup of vegetable oil
STEPS FOR PREPARATION:
Step 1.
Quick and easy, we start by peeling our plantains above.
Then we gradually slice it in thinly rounds to fry quickly
Step 2.
We take the sliced plantains into a bowl , sprinkle dash of salt and stir readily.
Step 3.
Next, we will wash and thinly slice our tomatoes π onion π§ and fresh pepper πΆ .
As here above.
Step 4.
To fry the plantains, we add in a frying pan and heat up the vegetable oil . Then add the plantains to start frying.
Once it starts to brown up, we flip it over to fry the other side. As above.
And have it readily here.
Step 5.
Next, we add our spice slices in a plate above
Add our egg to the spices above.
Then we add little salt and beat them thoroughly to incorporate.
Step 6.
We add a fresh oil in the pan, allow to heat ip just a little, then we add our spiced beaten egg into it.
Allow to fry for few minutes, allowing the spices to sautΓ© above. Then we serve
Who does not love eggs and plantains ? My girls can literally eat this meal as breakfast, lunch and dinner because plantains are one sweet meal or side dish for children. But for adults, I think its too fattening when eating all the time.
But as a cheat meal, we can always enjoy this delicious food once in a while, making sure to keep it light. Hope you enjoyed
