Despite the availability of take out and delivery services, many of us are eating more of our meals at home than we ever have in the past. To celebrate that, I started the #eatingthroughcovid tag last week to see if others can share what they have been eating during this crazy time.
If you feel like taking part in the initiative, go ahead and use that hashtag and tag me in your post so I can find it easily and give it an upvote.
[If you check out my last @bozz/bozzlife-eatingthroughcovid), you will see that I smoked some ribs on the Saturday before Easter. This sandwich is made up of what was left over. In my past I used to be able to put away a full rack of ribs. These days I am lucky to get through a half rack. That leaves me leftovers though and there is nothing wrong with that.
This sandwich had some mayo, chopped pork, colby jack cheese and Washington DC Mambo sauce on an everything bagel. It was tasty!
Another day we had a stir fry with chicken, brown rice, cashews, asparagus, peppers, and onions. It was really fantastic. We usually add a little sriracha sauce before we mix it all up to add some heat.
was concerned that I wasn't taking many pictures of the vegetables we were eating so I snapped this shot of our salad one evening. Just to prove that I am eating my veggies.
On my most recent trip to the butcher shop I picked up these fantastic looking burgers. They were 1/2 lbs. pre-made patties that had cheddar cheese and jalapenos in them. I had to be very careful grilling it so that I didn't undercook it. It was so thick!
This meal almost didn't happen. It was the day I made my trip to the hospital and thankfully they discharged me so I could enjoy this great meal as opposed to the bland hospital food.
Here is another shot:
The other day for lunch we had quick quesadillas with our leftover taco meat and some simple guacamole. It was a fantastically filling lunch.
Dinner was grilled chicken broccoli and homemade garlic shells. It was a fantastic meal. We love the hot mustard sauce from McDonald's so every time we go we ask for extra. You can see that on th side there for dipping.
Last night was another salad for dinner and then buffalo chicken sloppy joes over quinoa. It was a really hearty and filling meal. I plan on having the left overs for lunch today.
I will bring you pictures next week, but tonight we are grilling chicken again and making Greek tacos which is one of my most favorite meals ever.
Finally, I've been wanting to try this bourbon for quite some time now. The other day when I was out I decided to spend the $40 (which is a little more than I usually spend on whiskey) and pick up a bottle. It is fantastic and well worth the price that I paid for it. You can check out Michter's site here.
I definitely recommend it.
So go ahead and leave a comment or write a post and show me what you have been #eatingthroughcovid.
