Hey folks.
i prepare a salad several days per week and felt inspired to capture this one.
Salad Ingredients
1 large carrot
1 stalk of celery
Approx 1/3rd of a Romaine lettuce heart
A few teaspoons of sweet corn (from a can)
1/2 of a previously cooked sweet potato
Dressing Ingredients
Juice of 1 lemon
Extra virgin olive oil
Turmeric, freshly ground black pepper, ginger, Himalayan Salt, smooth peanut butter (100%), or agave (or honey if you're Beegan instead of Vegan).
On the side
Oat crackers
Peanut butter
Picked Beetroot
Preparation
Salad
Spray carrot, lettuce leaves and celery with MMS
Grate carrot
Finely slice lettuce and celery
Finely chop sweet potatoes
Mix all in a large bowl
Dressing
Mix lemon juice with equal amount of olive oil
Add spices/salt to taste
Add a dipped forkful of nut butter or agave syrup (make sure it's real)
Whisk with a fork
Pour over salad and mix well using two forks
Prep time - 20 minutes
Servings 2-3
