Vegetable and Mushroom Healing HotPot
Ingredients
- 3 tablespoons coconut oil
- 2 cloves of garlic
- 1/2 medium onion
- 1/2" ginger root
- 1 tablespoon turmeric powder
- 5 twists freshly ground black pepper
- Stalks and leaves from medium cauliflower (saved the flower for next meal)
- 300 grams mushrooms
- 4 carrots
- 2 parsnips
- A few sprouted chick peas (not used when i made Sprouted Raw Hummus a couple of days ago
- Other spices and condiments to taste (see image)
- 2 medium sweet potatoes
- Yeast extract (aka Marmite)
- Coconut cream - approx 150 ml.

Instructions
Chop onion, garlic and ginger, add to cast iron pan with coconut oil with turmeric and black pepper on low-medium heat. Stir with wooden spoon (so as not to scratch surface of pan).
Wash and chop mushrooms, add to pan and stir.
Separate cauliflower leaves from stalks, chop stalks and add to pan with approx 100 ml filtered water and stir.
Chop carrots and parsnips, add to pan and stir.
Add sprouted chickpeas and other spices.
Chop sweet potatoes, add to pan with chopped cauliflower leaves and stir.
Add yeast extract - approx. 1 teaspoon (i rinsed 2 empty jars with hot filtered water). Add a little more filtered water if needed (not much, it's not a soup) and lower heat. Add lid.
When all veggies are cooked, turn off the heat, add coconut cream and stir.
Ready to eat :-)
