Hello everyone, this is my first time visiting this beautiful community and I want to share this local recipe with you —Native Nigerian Jollof Rice.
This Native Jollof Rice is a hearty and tasty Nigerian one-pot delicacy. It is simply rice cooked in palm oil and other condiments. Apart from the fact that it is pocket friendly, it is also quick and easy. Then need I mention that the taste is simply irresistible, as irresistible as a royal feast.
For me, it is not just food, it's a comforting trip down memory lane, of my childhood in a rural area and of one of the first dishes I ever learnt to make.
Here are the ingredients used;
3 cups of rice
2 medium-sized onions
1 cup of palm oil
Salt to taste
1 tablespoon of Curry powder
Pepper
3 cups of spinach leaves
1 medium-sized cucumber
Water
Procedure;
I put my rice and water on the fire.
Parboil for about 10 minutes.
Bring down from the fire.
Wash thoroughly.
Drain and keep aside.
I put another pot on the fire.
I have my Palm oil ready.
I pour a cup of the Palm oil into the pot.
Here it is. Sizzling. Bleach for 1 minute.
I have my salt ready
Add to your taste.
My onions, fresh tomatoes and peppers.
I love my onions blended for a deeper flavour.
Here is the blended onions.

After the Palm oil is bleached for one minute and salt added to taste. Then I pour in my blended onions.
Cook for 2 minutes.
Then I pour in my blended tomatoes and pepper.
Stir.
Cover the pot and boil for 5 minutes.
Here it is. Sizzling.
I add the curry powder.
I stir and taste for salt.
I add my rice.
Add water to cover the rice. Cook until rice is soft and water is almost dried.
Then I cut my spinach leaves into tiny bits.
When the rice is cooked, I add the leaves, stir and cover for 2 minutes. Here it is.
Served with cucumbers.
Just one spoonful and you will understand why this dish is loved across generations🍱
