Hello everyone! I want to share with you an easy recipe for a healthy and delicious pumpkin dessert.
I grow the pumpkins (Cucurbita Hokkaido) and other vegetables in my own garden on the principle of biodynamic agriculture. So, I always have own organic vegetables to cook my favorite dishes. I like to cook the pumpkin cream soup, to bake the pumpkin with fennel, sweet potatoes and kohlrabi. However, most of all I like to make some different pumpkin desserts.
My pumpkin muffins contain only vegan ingredients.
Recipe
Ingredients:
- 300 g of pumpkin
- 1 tsp. of orange peel
- orange pulp (3-4 slices)
- 1 tbsp. of coconut oil
- 3-4 tbsp. of coconut flour
- 1 tsp. of pumpkin pie spice
- 1 tsp. of sugar with bourbon vanilla
- 30 g of walnuts
- 0,5 tsp. of organic olive oil
Directions
Step 1
Peel a squash, grate it and slice it. Grease a baking dish with olive oil. Put the pumpkin pieces in the baking dish, cover with foil.
Preheat oven to 180 degrees C.
Bake for 30 to 40 minutes in the preheated oven.
Step 2
Mash the baked pumpkin with a fork until smooth. Add the orange peel, the orange pulp and mix well. Then add 2 tbsp. of coconut oil, 2 tbsp. of coconut flour, 1 tsp. of pumpkin pie spice, 1 tsp. of sugar with bourbon vanilla and mix well again.
Step 3
Chop the walnuts in a mortar.
Put the pumpkin dough in a muffin tin, sprinkle with chopped walnuts.
Put the muffin tin in the oven preheated to 180 degrees C. Bake the muffins for 20 to 30 minutes in the preheated oven.
