Greetings beautiful Hivers, I hope you are fine and healthy wherever you are. Today, I am going to share with you a very healthy lentils recipe which is easy to make and loaded with nutrients and flavor. The lentils we are going to use for this recipe are the white split lentils with skin.
Nature has made lentils a rich source of proteins. The protein content in lentils is so high that in our country Pakistan we always recommend lentils to our anemic patients who are poor with low socioeconomic status as meat is too expensive to afford in our country be it mutton, beef or even chicken. Nature has also blessed lentils with a very palatable taste for adults and children alike.
So let's get started with our today's recipe.
Ingredients
White Split Lentils with skin 300g, washed and soaked in water for 3-4hrs
Tomatoes 180g, chopped
Onion 180g, finely chopped
Fresh green chillies 3, whole
Salt ½ teaspoon
Black pepper ½ teaspoon
Red chilli flakes ¼ teaspoon
Cumin seeds ⅓ teaspoon
Olive oil 3 tablespoons, you can substitute with any cooking oil of your choice.
Water 3 litres
Fresh green coriander for garnish
Cooking Method
Drain the water from the soaked lentils. Add the lentils to your cooking pot. Add chopped tomatoes and onions to the lentils. Also add salt, black pepper, red chilli flakes, cumin, and cooking oil to the lentils.
Then on a medium-high heat, bring the lentils to a boil. Be careful not to spill over the lentils on boiling. Once the water starts to boil, reduce the heat to a medium-low, cover the pot with a lid and cook the lentils for 45 minutes or until completely cooked, stirring every 8-10 minutes intervals.
Once the lentils are completely cooked, add whole fresh green chillies and simmer for another 5 minutes.
You can cook more to reduce the water to your desired consistency for the lentils. I like it to be a little thick.
Garnish the prepared lentils with chopped fresh coriander. Delicious lentils are ready to serve.
Serving suggestions
You can serve the lentils with:
Roti/chapati
Pita bread
Boiled rice
Or just eat it with a spoon like myself😊
