Hello, and greetings all hivers. Today my recipe is for Pie which is different then what we make in the West. Today is Monday and each Monday has some special meaning for us here in India. I try to make some simple food without onion and garlic. Today's recipe is made with just a few ingredients.
2 cooked sweet potatoes. around 200 grams 1/2 cup Jaggery 70 grams. 2 tbsp cornstarch 2 cardamom pods 2 pinches of salt 1/2 tsp coconut oil 5 soaked walnut halves which I actually had other plans for 1/2 fresh coconut grated 170 grams.
I peeled sweet potatoes

kneaded the dough and set aside for 10 minutes.
now for the filling. Added crushed cardamoms in the coconut.
Mixing jaggery in coconut.
After I found these walnuts in the fridge I chopped them and mixed them in a coconut jaggery mixture.
The filling mixture for the pie is ready.
Here I don't bake so long. I had a pie pan somewhere but i could not find it , so I used \ cake form instead. First greased the form with our own fresh coconut oil.
Pressed by hand the sweet potato dough into a pie shaped crust.

Baked for around 15 minutes at 180C in preheated oven.
Then I took it out of the oven.
And filled it with the coconut jaggery mixture.
The pie is ready to go back in the oven but first I added some raisins on top. And baked for around 20 minutes at 180C.
