Today, I'm sharing a recipe for Christmas cookies that I made before we travelled to India. I prepared these to share with my Norwegian friends. I hope you will like them.
Ingredients:
2 cups of white flour
1/2 cup of gram flour
1/2 cup of sugar
1/2 cup of Dalda vegan/plant-based fat
1/4 cup of chopped nut mix
2 pinches of salt
1 tsp baking powder
1/2 cup of coconut milk
vanilla essence or cardamom for flavour
some decorative chocolaty sugar pearls.
In a plate or bowl, mix sugar and Dalda until the mixture gets fluffy.
In a strainer, mix white flour and chickpea-flour/gram flour.
add baking powder and salt. shift it in the sugar mixture. Add chopped nut mixture.
Add vanilla essence (optional)
Gradually add coconut milk. I tried with 1/4 cup, but it wasn't enough, so I added 1/4 cup more to get the appropriate dough consistency.
when the dough is ready, keep it aside for 15 minutes.
Preheat oven to 180 °C.
Divide the dough into appropriate portions and make small balls.
Make them flat by pressing your fingers.
Use the hand mixer bit to make a flower shape.
Place the sugar pearl in the center.
Bake them in a preheated oven for about 10 to 15 minutes.
Here they are ready nice, crispy, and delicious.
Enjoy them with your coffee or tea.
