Meatless Monday Broccoli Spinach Soup
Hello, friends, vegan lovers hivean, and community. After a long time, I am presenting my soup recipe. I made mostly tropical soups in India. But didn't take photos of all of them.Now since came to Norway, I have more relaxing time to keep me active here in Hive blockchain.
Today, for our meatless Manday, I made Broccoli Spinach soup garnished with cashew cream and brinjal/eggplant fry.
Ingredients I Used :
1 broccoli (here, we get it around 400 grams in weight)
1 package of spinach, 200 grams
1 garlic. It is a small Indian garlic that looks like more, but not
1 tsp thyme
1 tsp freshly ground black pepper
1 tbsp olive oil
15 cashews
Washed spinach in salt water. Drained and kept aside.
Separated broccoli florets from and hard stem, and washed in salted hot water. Cooked the stem pieces until they became soft.
Peeled and chopped garlic.
Here, I had used olive oil, chopped garlic, and freshly ground black pepper
Warmed a saucepan and poured oil.
Added thyme.
Then chopped garlic
Added broccoli to the garlic.
Salt
Pepper and cooked until the broccoli gets softer. Around 5 minutes.
Added cooked broccoli stem pieces.
Then spinach, covered and cooked for about 3-4 minutes.
After the spinach has cooked, removed it from the heat. Blend to make a fine paste using an immersion mixer.
After I finished making the fine soup, I covered it and set it aside.
Meanwhile, I found two brinjals in the fridge, they had started getting bad on stem I cut off the bad part and used them together with soup.
Ingredients:
2 brinjals
1/2 tsp salt
2 pinches of turmeric
2 pinches of chili powder
2 tbsp rice flour
2 tbsp oil.
peeled them and sliced them without separating the slices. They look like fingers.
Sprinkled some salt and turmeric on. Kept aside for 5 minutes.
After 5 minutes squeezed out the water and discarded water.
Added two pinches of chili powder to brinjals.
Coated brinjals in rice flour.
Used sunflower oil to shallow fry.
Pleced coated brinjals in the pan one by one
Fry them from both sides.
Soaked cashews in hot water.
Ground them with very little water.
The soup and brinjals are ready. I serve the soup topped with cashew cream.
First, poured soup into the bowl.
Pour some cashew cream on top.
Using a chopstick made a fun design.
Was our delicious dinner today.
