Roasted yellow squash with aubergine dip
Hello friends, vegan lovers, and community greetings, today I would like to share an easy but delicious recipe, roasted yellow squash with aubergine dip.
As usual, I decide on the spot to make a recipe post. Likewise, I didn't prepare for photos from the beginning.

Here are the ingredients:
1 yellow squash cut into quarters
1/2 aburgine
1 red paprika
1 onion
2 tomatoes
2 tbsp tahini
1 tbsp tomato paste
1 tsp chili powder
2 tsp salt
1 tbsp chopped coriander.
4 tbsp olive oil
2-3 garlic cloves
Cut yellow squash into quarters.place them in a baking tray.
Sprinkle some salt on it.
clean, peel, and cut an aubergine into appropriate pieces.
Place the aubergine and red paprika( cleaned and cut in half) with the squash in the baking tray.
Sprinkle 1 tbsp olive oil on it.
And bake at 180 C for about 40 minutes.
Meanwhile, prepare the other things
Chop onion
Crush tomatoes and garlic
Blend tahini with water
Chop coriander.
After 40 minutes, when the vegetables get tender/cooked, remove them from the oven.
Make a paste of cooked/roasted aubergine.
cover the squash and keep it in a warm oven.
Paste of red roasted paprika.
Now we have all ready ingredients here.
1/2 cup of crushed tomato with garlic
1/2 cup of aubergine paste
1/4 cup of red paprika paste
1/2 cup finely chopped onion
thyme and oregano 1/2 tsp each
1 tsp salt
1 tsp chili powder
1/4 tsp black pepper.
1 tbsp oil
Place a pan on the stove, pour 1 tbsp of oil.
When it oil gets hot, add thyme and oregano
Lower the heat, add chopped onion. Stir it for 2 minutes
Add crushed tomatoes and stir until the water dries out. Add paprika paste and mix well.
Add some water and stir it until the roughness disappears.
Add tomato paste.
Salt, pepper, and chili. mix it well.
The aubergine paste. Mix it until well combined
Add 1 tbsp water and cook for 2 minutes.
Sprinkle coriander.
Mix 2 tbsp of tahini into it, stirring until the tahini is well combined, and remove from the heat.
Serve tahini in the bowl, adding extra tahini and olive oil
