Hello, community and friends greetings. Today is Monday we have a meatless day for food. I hope you all are making nice food for the #plantpower vegan community. and enjoying yourself with that. Today I made a very simple quick pasta salad with cabbage and some vegetables
Ingredients: 1 cup red cabbage 1 cup green cabbage 1 red paprika 1 green paprika 2 eggplant small-sized 8 brussels sprouts 1 onion 150 grams of green beans 10 green olives 1 cup pasta. 1 tsp salt 1 tsp black pepper. 2 tsp cooking oil. 1 tbsp chopped parsley. 1 tbsp sunflower seeds.
Cut all vegetables one by one. accept green beans. Also finely chop cabbage.
Clean and wash the green beans. put them in the pan and add water. Put the pan on the heat and start cooking the beans.
Here is a trick on the pan instead of covering put the steamer plate or strainer and organize the cabbage.
Carrots and Brussels sprouts. cover the pan and cook them for around 2-3 minutes.
Heat an iron skillet add 1 tsp oil and eggplant slices and cook them until they become tender.
Now put onion and red and green paprika into it. and stir well.
Add salt and pepper.
Stir well and keep low heat.
Stir in all steamed vegetables and cooked beans.
Add parsley.
Stir well. cover and keep it on very low heat.
Boil water with salt and cook pasta. drain water.
Stir pasta into vegetables.
Mix it thoroughly. And here it is done.
Making Dressing
ingredients: 1 tbsp mustard 1 tbsp avocado oil 1/2 lime 1/2tsp salt 1/2 tsp black pepper 1 tsp thyme
