Hello, community and food lovers! Happy New Year to you all! Today, I made some vegan porridge. It’s very simple, yet not commonly made. In Norway, I find it difficult to prepare because of the delicate tropical fruit, custard apple, which is hard to find there. However, it is available here in India.
Custard apples are primarily cultivated in Maharashtra, the state where we live, although in a different district. These fruits are abundant during the winter and can be found at our local weekly market. They are quite special, and everyone from children to adults enjoys them. Eating them fresh is also delightful, and they tend to be best in winter.
Custard apples are packed with health benefits and can be used to make delicious ice cream, kulfis, and rabadi. Personally, I prefer them fresh or in porridge without any sugar.
to make this porridge I used:
Ingredients:
2 Custard Apples
1 cup papaya
2 bananas
1 tbsp chia seeds
1 cup fresh coconut
1 tbsp cashews and raisins
Opened the custard apple to remove the seeds as well as checked for any brown spots. it should be nice and white.
Separated the seeds from the skin.
I used a mini vegetable chopper to remove the seeds. You can do it by hand or use a whisk.
After 1 minute of running mini cutter
The seeds were separated from the pulp and the pulp became like a custard.

discard the seeds and skin.
chia seeds, locally grown papaya, and custard apple pulp, cashews, and raisins
Soaked 1 tbsp chia seeds in water.
That papaya was soo good I ate half and the remaining 1 cup of papaya I used in porridge.
I put the custard apple in the bottom of each glass.
Then I added a layer of mashed papaya.
Then topped it with the soaked chia seeds.
But the glass seemed less than full.
so I found these bananas,
sliced them and layered them on the top of the chia seeds.
Added chopped cashews and raisins.
made some coconut milk from a coconut from the garden.
Poured it over the banana.
Garnished with a few chunks of papaya and mint leaves.
A delicious healthy lunch for the new year. good start.
