Hello, community and food lovers greetings. today I just used up some leftovers that were in the fridge. They are in small quantities of vegetables. I used them to make dinner today.
Vegetable sauce for rice.
Ingredients:
3-4 slices of aubergine that are leftover from Saturday.
% carrots
2 small onions
1/8 of pineapple leftover from fruit salad.
1/4 green paprika.
! tsp thyme
1 tsp oregano
1 tbsp tahini
1/4 tsp black pepper
1 tsp salt
1 tsp red chili
2 tbsp tomato puree
1 tbsp red currant sauce
2 cloves of garlic
2 tsp oil.
First, chop all vegetables and garlic.
After heating an iron skillet add oil in the skillet.
Add garlic and onion. and stir it for 2 minutes.
Add thyme and oregano.
Add chili powder pepper and salt and stir it well.
Add all chopped vegetables. Stir it.
Add red currant sauce.
Then tomato puree.
Then Tahini and 1 cup water. cover and cook for around 3-4 minutes.
If you have parsley can use it at the end I haven't this parsley at home.
And here is the vegetable sauce.
Cook basmati rice
Roast some peanuts and sunflower seeds in a pan and sprinkle them on the sauce before serving food to keep them crunchy.
Here is dinner served, with slices of tomato, onion, and olives.
