Hello, and greetings to all vegan friends and the vegan community.
Pasta is not my tradition. mostly we buy ready whole grain pasta and cook it at home. bur first time I got an idea to make a new creation. It is a bit of work but I
enjoy making food when i have time and today i was free from work .
Making pasta
Ingredients:
White bread flour
Wholemeal flour
Rock salt
Beetroot
Spinach
I made three different flavors using beetroot, spinach, and plain dough.
grated and blended in mixer 1 small beetroot for red
1 cup of fresh spinach blended in a mixer for green
1/2 cup of white flour
1/2 cup of wholemeal flour
1/4 ts salt
1/3 cup of each liquid from spinach and beetroot and plain water
ingredients for fillings and mushroom sauce.
3 mushrooms
1 small onion
3-4 garlic cloves
1 carrot
2 cooked potatoes
1.5 tbsp gram flour. few branches of fresh thyme
1.5 tsp black pepper
1.5 tsp rock salt
1/4 cup of green peas
1/2 tsp turmeric
1/4 cup of freshly grated coconut
1/4 cup of walnuts.
1 cup fresh spinach
2 tbsp cooked chickpeas
2 tsp peanut butter.
2 tbsp olive oil.
a few basil leaves
1/4 tsp lemon zest
juice from 1.4 lime
1/4 tsp mustard seed crushed.
Now making different colors and taste filling in pasta.
First filling 1/4 cup of green peas, 2 cooked potatoes pinch of salt, a pinch of turmeric few fresh thyme leaves. grind the green peas with thyme add in the mashed potatoes adding salt and turmeric mix thoroughly.
Second filling with 1 medium size grated carrot 1/2 cup grated fresh coconut, 1/4 tsp salt 1/4 tsp pepper, 1/4 tsp mustard, a few drops of lime, and 2 tbsp homemade vegan mayonnaise ( I will post this mayonnaise recipe soon)
mix all together. you can use a mixer for blending.
Third filling pound the walnuts to a coarse powder and roast it
Blend spinach in the mixer.
add to the blended spinach 2 tbsp chickpeas, the roasted walnuts, salt, black pepper and peanut butter.
Here I have my dough and fillings.
Making pasta.
plain with potato and green peas.
Then the green dough with carrot and coconut
and then the red dough with spinach, walnut and chickpeas.
here is my ravioli-type pasta along with some other shapes without fillings
Boil the water add salt and cook the filled pasta for 10 to 12 minutes. drain the water after it is cooked. and put some olive oil on the pasta. boil the other pasta separately and pour a little olive oil on it
Making yellow sauce
In a frying pan warm 1 tbsp olive oil and add garlic and finely chopped onion. stir until aromatic. add gram flour and stir in finely chopped mushrooms.
Add salt, pepper and paprika powder.
Add water and cook for 2 minutes. make a slurry from 1/2 tbsp gram flour slowly stir in the sauce and cook until thick.
Serve with a salad.
