Holla friends, it's been a while, I hope I find you well today. The thoughts of fresh green vegetables are greens of life as they make us healthy and fresh, and also give our bodies all the necessary vitamins it requires to boost our immune systems. I felt like I was losing a lot of energy yesterday after spending more than the planned time in the ministry.
I wanted an energy boosting meal and vegetable soup came to my mind, so I decided to make myself an emerald green vegetable soup. I wanted it as fresh as possible, so i sourced for the right vegetables, very fresh and green for my soup, and it turned out exactly the way I wanted.
INGREDIENTS
● 1kg sliced vegetable (pumpkin)
● 500g waterleaf (sliced)
● 3 teaspoon salt (used also to wash vegetables)
● 3 medium onions bulb
● 150g pepper
● 4 cooking spoon palm oil
● 1 tablespoon soy sauce
STEP 1
Thoroughly wash vegetables with salt multiple times. I advise you to wash them separately, to properly remove sand and dirt. Dry them in a seive so that excess water can leak out.
STEP 2
Chop onions and peppers. I divided my into into two places. One part was sliced, and the other grinded with the pepper.
STEP 3
Now, in a clean and wide pot, add the 4 tablespoons of palm oil. Vegetables take lots of oil, so you can choose to use more oil.
Add the finely chopped onions when oil is hot and the pepper mix afterward. Stir well to avoid burning.
STEP 4
Add waterleaf and stir, fry for 10 minutes, or until the water in the waterleaf dries up. Now add pumpkin leaves and stir. Add your salt and soy sauce. Check to see if more palm oil is needed at this point because I added a cooking spoon extra at this point because the vegetable took all the oil.
Now our delicious emerald green vegetable soup is ready. I got the needed strength after having this very fresh and tasty vegetable soup. Sometimes, all we need is just greens to come back to life 😃
This vegetable soup goes well with rice, yam, beans, and swallow. It's a multipurpose vegetable soup!
