Greetings my friends, I hope you're all doing well and enjoyed the weekend, recharging your batteries to start a new week. Today, I want to share my entry for the weekly contest Qurator's: Hive Top Chef, where we're invited to prepare delicious dishes with a special ingredient. This week, the star ingredient is the potato, a special food that provides us with many nutrients and energy. At home, we love potatoes. Today I wanted to prepare something simple with what I had in my fridge, and what better than potato arepas with spinach? Eating arepas in Venezuela is practically a daily routine, haha, so these potato arepas were perfect for my breakfast, or any meal of the day. They're very easy to make and, of course, delicious. I'm sharing the step-by-step instructions.
Potato arepas with spinach
Ingredients:
2 potatoes (this amount makes 3 arepas)
3 tablespoons of cornstarch
50g of spinach, or the amount you prefer, depending on your taste
Half an onion
Olive oil or any vegetable oil you have at home
Salt and pepper to taste
Preparation:
1- First, wash and peel the potatoes. Then cut them into small cubes and cook them in a pot of water until tender.
- While the potatoes are cooking, chop the onions and spinach. Sauté them for several minutes in a preheated pan with a little olive oil, adding salt to taste as they sauté.
3- When the potatoes are soft, remove them from the heat, drain the water, and add them to a bowl. Then mash them to make a purée. Add a little salt and pepper.
4- When the sofrito is ready, remove it from the heat and add it to the mashed potatoes, along with the cornstarch. Mix everything very well until you obtain a smooth dough.
5- Once our dough is ready, we form the arepas. You can grease your hands a little, although this dough shouldn't be sticky. Shape the dough into a round, then flatten it to form the arepas. Place them in a non-stick pan with a touch of oil and cook thoroughly on both sides.
6- Once the arepas are golden brown, remove them from the heat. You can bake them for about twenty minutes, or if you prefer, you can enjoy these delicious arepas freshly cooked. The flavor of the spinach and onion, combined with the potato, is wonderful; they truly turned out exquisite.
