Happy day my vegan friends, as always it is a pleasure to be here again and to be able to share a new recipe, which is very easy, is made with few ingredients and of course it is delicious, certainly sometimes we are wrong when thinking that vegan food it can be boring, but it's just the opposite. You can make so many delicious things, with few vegetables, it's surprising. On this day I share the recipe for roasted pumpkin and garlic gnocchi. These are crazy flavors, roasted garlic and pumpkin, the mix of these flavors is fantastic. To accompany these gnocchi, prepare the homemade tomato sauce, my favorite, which is also very easy. I will tell you how to prepare this dish.
Pumpkin and roasted garlic gnocchi, in red sauce.
Ingredients:
1 pumpkin or medium pumpkin.
Half a head of garlic or 5 cloves of garlic.
2 and a half cups of all-purpose flour.
Salt, pepper to taste.
Olive oil to taste.
For the tomato sauce we need three tomatoes, two cloves of garlic, half an onion, a basil leaf, salt to taste, and olive oil or whatever you have at home.
- Preparation of the tomato sauce
To make the tomato sauce, cut the onion and garlic into small squares, fry them, when they are well fried, add the diced tomato, a touch of salt, oregano (optional), cover and leave cook for a few minutes, until the tomato softens, and the sauce is made, when it is almost time to remove it from the heat, add some basil daughters, it adds a delicious flavor and aroma to the sauce.
- Preparation of the gnocchi.
1- Chop the pumpkin in half, and place it along with the garlic on a baking tray, add olive oil to the pumpkin and garlic, wrap the garlic in aluminum foil and put it in the oven for approximately 50 minutes. This will depend on the type of oven.
2- After the time has passed, we check if the pumpkin is soft, if so, we remove it from the oven, remove the seeds, and then all the pulp, the same with the garlic, and add it to a bowl, add salt and pepper to taste. , and we mix.
3- Then we add a little flour, mix a little, and then we take it to a counter, and we finish adding the flour, we integrate very well, if it gets very sticky we add a little oil, and if you see that it is very soft add a little more flour.
4- Once the dough for the gnocchi is ready, we stretch the dough a little and make a roll, to later cut it into several parts, and form the gnocchi, to take them to cook in a pot with boiling water, for approximately 10 minutes.
5- After the time we removed from the water, and we served with the red sauce, to decorate, I added a little nuts, but this is optional, once our dish is ready we enjoy this delicious dish.
