Happy day my friends, I hope you are feeling very well, today I want to share with everyone a recipe that I love, it is typical of Arabic food, and I am talking to you about some vegan kibbes, Arabic food is one of the favorites of everyone at home, when we want to eat a little healthier, or lighter, I prepare Arabic food, tabbouleh, baked kibbes, creams, everything is delicious, on this occasion I wanted to make these kibbes with lentils and wheat, they are a delight, nothing that I can't envy the traditional kibbes, the flavor is crazy, and the best thing, everyone at home loved them, I made them fried, but they can also be baked, or in the air fryer, and they turn out great, I'll share the step by step.
Lentil and wheat kibbes
Ingredients:
1 and 1/2 cup of lentils, previously soaked the day before.
1/2 cup of wheat.
Half a paprika, half an onion, and 3 cloves of garlic, you can use more dressing if you prefer, that is up to your taste.
Seasonings, paprika powder, cumin, 7 spices, a teaspoon of each.
1/3 cup of breadcrumbs, (optional).
Salt and pepper to taste.
Olive oil, one tablespoon.
Preparation:
1- Add the wheat to a bowl with enough water for approximately 20 minutes, so that it hydrates.
2- After removing the water from the lentils and washing them very well, we add them to a food processor and blend.
3- Add the crushed lentils to a bowl, and set aside.
4- Chop the onion and paprika into squares in a frying pan with a little olive oil, sauté the garlic for a few seconds, and then add the vegetables, sauté everything together for several minutes, remove from the heat, let it rest.
5- Add the lentils, spices, salt, and pepper, then also add the sautéed onion, paprika, and garlic, mix very well, until everything is well integrated. We can try to see how the taste is, and if needed, add more seasoning or salt.
6- We remove the water from the wheat very well, and add them to the lentil mixture, mix everything very well, until everything is well integrated, when the dough is ready, cover and place in the refrigerator for approximately 1 hour.
7- After the time has passed, we remove the mixture from the refrigerator and begin to form the kibbes. I added a little breadcrumbs to each kibbe so that they would have more consistency when frying them, but this is optional. After forming our kibbes, we fry them in a pan, with plenty of hot oil, we cook well on both sides, they should be very golden brown.
As I mentioned at the beginning, you can also make them baked or in the air fryer.
8- After having all the fried kibbes, we served and enjoyed this delicious dish, I served them with lettuce, and toasted Arabic bread, I also made a sauce with sweet mustard and olive oil, they are also enjoyed with an Arabic cream of your choice, and you will have an exquisite avocado.
