Malay achcharu is a delicious Sri Lankan dish that beautifully blends sweet, sour, and spicy flavors into one unique preparation. Made with a mix of fruits, vegetables, and aromatic spices, it is often prepared during festive seasons and special occasions. Its rich taste and vibrant appearance make it a perfect accompaniment to rice and curries, adding a special touch to any meal.

Materials Used.
pitted dates 100g.
Grated jaggery 50g.
Small onion or chopped onion 200g.
Carrots, cut into small pieces 150g.
Salt to taste.
2 teaspoons of chopped ginger, cloves, garlic paste.
1/2 cup of vinegar.
2 chopped fish chilies.
5 green chilies.
1 Teaspoon of chili powder.
1 Teaspoon of pepper powder.
1 1/2 teaspoon of Mustard paste.
The cooking process as follows.
Now let’s prepare the dish. First, take a clay pot and add jaggery, dates, garlic, ginger paste, chili, pepper, mustard paste, salt, and vinegar. Mix everything well until combined.

Next, place it on the stove and cook for a short time. Once it is slightly cooked, add carrots, onions, capsicum, and green chilies. Mix well, then remove it from the heat immediately and let it rest for about an hour. After that, it is ready to be served.
