As a vegan, I'm always on the lookout for creative and nutritious breakfast ideas. Today, I'm excited to share with you a unique and delicious breakfast combination that will kick-start your morning: crispy homemade plantain chips paired with a special tea infused with coffee, and vegetables. This combination makes a wholesome and energizing meal.
Why Plantains and Veggie Coffee Tea?
Plantains are a staple in many parts of the world, offering a great source of fiber and natural carbohydrates. Adding vegetable to tea not only enhances the flavor but also boosts its nutritional value. This combination provides a wholesome and energizing meal to start your day.
Ingredients
For the plantain chips
- Ripe or unripe plantains
- Salt
- Vegetable oil (using power oil)
For the Tea
- Mint leaves
- A sachet of Cadbury chocolate drink (3in1 drink which has coffee, chocolate and sugar)
- 1 cup of hot water.
Preparation Steps:
Plantain chips
Wash the plantain with clean water. Peel off the back and slice the plantains – Cut them into thin, round slices for a crispy texture.
Put the sliced plantains into a bowl and sprinkle salt (½ tablespoon per serving).
Shake the bowl to mix evenly.
Heat the oil in a pan – before frying, ensure the oil is hot enough but not smoking.
Fry the plantain slices – Fry for about 3-5 minutes on each side until golden brown, then bring it out with a perforated spoon. Drain on stainless sieve to remove excess oil.
For veggie Tea
- Prepare the coffee with hot water
- Pour in a sachet of Cadbury into the cup and add hot water.
- Rinse the freshly plucked mint leaves and add it into the cup.
- Allow for 3-5 minutes for the flavor to infuse
Serving
Arrange the crispy plantain chips neatly on a plate.
Serve the coffee tea in a beautiful cup, optionally garnishing with a mint leaf.
