🌿The kithul palm or juggery palm is a native plant to Sri Lanka, Maleshiya and India. In English juggary palm is also known as toddy palm , vine palm, solitary fish tail palm etc…
🌿The scientific name for this plant is Cargota urens.
🌿This plant is very important and resourceful and we can make these products from the kithul palm tree.

🌿We make kithul juggary and kithul treacle by collecting the sap from the juggary palm.
🌿Kithul flour is made from the starch extracted from the pith of the kithul palm trunk.
🌿In this post I will present to you what are the food we can make with kithul flour.
🌿To make the flour we must cut down kithul tree first.
🌿After that we cut the pieces of pith in to small pieces.
🌿Then we pound the pieces of pith using traditional motar and pestle.
🌿Then the pith is mixed with water and drains through a cloth tide to the pot. Then it is dried in the sun and it produces kithul flour.
🌿Eating kithul flour based products is very good for your health. It has the ability cool down your body and treat health problem such as cracked feed, gastric alcers headaches and even low and high blood pressure.
🌿As making the flour is a big process. I will not the presenting it in this post but my dear friends I will be posting the kind of food we can make from this product. I currently bought this kithul flour from the market. And if kithul flour is not available in your countries you can by it online and I hope you will try this recipe.
🌿By using kithul flour you can make the kithul flour porridge and kithul thalapa. Today I will be teaching you how to make kithul thalapa.
🌿There are many ways to make kithul thalapa but I will explain you how to make kithul thalapa in traditional way in Sri Lanka.
🌿This recipe is very simple you can make this with onlier few ingredients.
Ingredients for thalapa
150g Kithul Flour
1 cup of water
1 cup of thick coconut milk
Kithul juggary or sugar 50g
Methods of Kithul Thalapa
🌿Dissolve the kithul flour in 2 cup of water
🌿Then pour the mixture in to a pan and heat it in slow heat and mix it using strong spoon for about 5 to 6 minutes.
🌿Mix it until it turns in to a sticky kind of mixture and then turn off gas stove and leave it to cool.
🌿If you like you can cut them in to small potion or you can put small cup and cool it get aside.
🌿But don’t get ready to eat yet because the dish is not ready. We still have to make special syrup to eat this .
Method of Syrup
🌿Add brown sugar or grated juggary to the thick coconut milk and mix it well.
🌿Now heat the mixture for 2 – 3 minutes.
🌿This is the syrup for kithul thalapa.
