Have you heard of the popular vegan dish from Sri Lanka called kiri kos curry? It's made with jackfruit and is super creamy and delicious.
But if you're living in Europe, you might not be able to find fresh jackfruit. Don't worry though, I've got some tips on how to prepare unripe jackfruit for cooking. You can usually find it in a bottle, can or dried pack. With these tips, you'll be able to enjoy this amazing dish in no time!
Back in 1998, when I was still a student, a jackfruit tree grew in my home garden. And now, during jackfruit season in my country, there's a bunch of unripe jackfruit on the tree. It's too high up for me to pluck alone, so my husband helps me out.
Eventhough jackfruit is delicious it can be a little hard to cut because the sap is really sticky and its hard to clean so cut it very carefully.
First we apply some coconut oil in our hands and knife and then we cut the jackfruit into half pieces, and then into smaller ones. There's too much for just my family, so we're also giving some to our neighbors. Now, we're getting ready to cook it up and here are the steps we take to prepare it.
Ingredients
1 bowl unripe jackfruit, chopped into small pieces
1/2 cup thick coconut milk
1/2 cup thin coconut milk
1 onion, sliced
2 green chilies, sliced
2 - 3 garlic
1 tsp turmeric powder
1 tsp chili powder
1 tsp curry powder
1 tsp mustard seeds
1 sprig curry leaves
3 dried red chilly
Salt to taste
2 tbsp oil
Method of coocking
🍀First add the jackfruit seeds to the pot and next add chopped small pieces unripe jackfruit. Because the seeds are really hard and they have to be boild in the very fast.
🍀And same time add onions, green chilies, garlic, curry leaves.
🍀Add turmeric powder, chili powder, curry powder, salt and pour in the thin coconut milk and let it cook for 10 - 12 minutes, or until the jackfruit is tender.
🍀In Sri Lanka, we traditionally cook creamy jackfruit curry on a wood stove, you can see now real traditional wood stove in our homes.
🍀And next add the thick coconut milk and cook for another 5-7 minutes.
🍀Heat oil in a pan over medium heat. Add mustard
seeds, dried red chilies fry until the mustard seeds start to pop.Add some garlic pieces also.Fry until the garlic are golden brown.
🍀Finally add content of tempered mixture to the jackfruit curry.
🍀Once the curry thickens, take out from the wood stove.
🍀There you have it! A traditional Sri Lankan jackfruit creamy curry cooked on a wood stove. My favorite dish with bread toast. Enjoy!
