I've been doing the 16:8 intermittent fasting of late, but sometimes my body says 'screw that, you need breakfast NOW', and generally, that's a sign to listen. But what to eat? I get so bored of breakfast and tend to grab a handful of almonds. I'm not big on toast and I'm fed up with summer smoothies. Nothing was cutting it at all this morning - until I recalled reading something about banana oat pancakes.
Of course, I dont really read recipes - I just make it up after reading something vaguely once. It works for me. Into a blender went a frozen banana (fresh would be fine), a few handfuls of oats, a few tablespoons of coconut yoghurt, a pinch of salt, some cinnamon and some linseeds. I whizzed it up, adding a little extra water so the blades didn't stick. Too easy. Once it rests for five minutes, the oats will soak up the water anyway and it'll become quite thick.
They held together very well, and with a drizzle of maple syrup, some coconut yoghurt and fresh limes from my garden (as well as a couple of pretty little edible heartsease) they made a very satisfying breakfast indeed. No eggs, no flour, no fuss - and definitely something that will be a staple for my breakfasts in future!
I have been making a version of this ony travels with ready made oatflour and fork mashed banana. Too easy!
