Wishing you all a happy warm Thursday and and hope you are enjoying good health, eating delicious meals. My todayβs recipe to you is a healthy carrots π₯ pancakes for breakfast π₯
I love to make and enjoy pancakes, but I like to make them healthy by incorporating some vegetables or fruits to give them a boost for good health. And craving for pancake π₯ this morning took me to the refrigerator in search for vegetable which some carrots π₯ came to my aid quickly.
This recipe of carrot π₯ pancake is a simple and easy one because I did not need to blend the carrots, but simply decided to chop them thinly in a way it will stay crunchy when mixed with other ingredients into a batter for pancakes π₯.
Quick and simple as I take you through the process here below.
INGREDIENTS:
180 g of all purpose flour
3 medium fresh carrots
3 tablespoons of premium sugar
1 teaspoon of bananas extract
1/2 teaspoon of baking powder
1/2 teaspoon of baking soda
1/4 teaspoon of salt
1/4 glass of spring water
1 teaspoon of non-dairy creamer milk
Sprinkles of hot chili πΆ pepper
10 ml of vegetable oil for frying
STEPS FOR PREPARATION:
Step 1.
We begin by first scraping and washing the carrot .
Then we slash them thinly and gradually chop them into thin squares above .
Step 2.
Once the carrots are finely chopped, we take the flour into a mixing bowl
We add sugar , baking powder , salt and baking soda above.
Step 3.
We add our non dairy creamer milk and stir
Here we add water gradually and stir into batter As above
Step 4.
We add the banana extract here above
And some sprinkles of hot chili pepper for a bit of spice few drops of vegetable oil.
Stir thoroughly to incorporate
Step 5.
We add the chopped carrots and incorporate properly
Step 6.
To fry , we will heat up the pan and drizzle bit of oil before we scoop a spoonful of batter into the pan above.
Once the edges are bubbled up drying, we flip it over to fry the other side.
Step 7.
Gradually, we scoop in , fry and flip over each pancake π₯

I think everyone loves to eat pancake , especially if you have little kids at home. And pancake seemed to be one of the easiest breakfast we can depend on. So making it more delicious and healthy will be mostly what we will love π
You can surely pair pancake π₯ with any fruit π or vegetable π₯, and not just carrot π₯. But honestly, this recipe is one good one to enjoy with family and friends.
