I bring you some vegan love โค๏ธ today to make your weekend worthwhile because its a meal ๐ฅ so healthy. A meal of light lunch of spinach paired with half ripped plantains with lots of spices.
I love it when my meal contains lots of vegetables ๐ฅ especially meals such as todays recipe with fresh spinach from farmers market, and lovely cherry tomatoes ๐ that I felt like eating up raw. This is good health I said to myself staring at the base ingredients , and I could not wait to prepare this meal ๐ฅ.
Lets go friends to prepare and enjoy this vegan love this Sunday.
INGREDIENTS:
Bunch of fresh spinach
1 large half ripped plantains
2 reddish cherry tomatoes ๐
1 medium red onions
Vegetable oil
1/2 teaspoon of curry powder
1/2 teaspoon of thyme herbs ๐ฟ
1/2 teaspoon of chili powder
1/2 teaspoon of salt
2 cloves of garlic ๐ง
STEPS FOR PREPARATION:
Step 1.
Spinach is the base of this recipe, so I will first pluck it and discard the big hard stems . As above
Step 2.
I will wash the spinach thoroughly with lots of water, leave it in a basket ๐งบ to drain off water.
Step 3.
Next I will slice the spinach as here above.
Step 4.
And boil some water to steam and bleach it a little for better taste.
And drain off the water after 30 seconds.
Step 5.
Then will wash and slice the cherry tomatoes ๐ , onions ๐ง and garlic ๐ง here above.
Keep aside.
Step 6.
And here I will cut and peel the plantains , slash the plantain open into four.
And will strip tiny cut it here above .
And have it all in strips here readily.
Step 7.
Next is to sprinkle some salt on the strips inculcating it together using my fingers.
Step 8.
And will shallow fry them heating up the vegetable oil. Flipping each to brown properly.
As here above.
Step 9.
Then will fry the vegetables with the oil from the plantains adding the onions first, then the cherry tomatoes and garlic.
Will add the spinach and stir it in to incorporate before adding the spices
As here above.
And incorporate all properly.
