Rice noodles or known as Mie Tiaw in my city are one of my favorite noodles. Because when I consume it, this noodle is not like other noodles. Maybe because this noodle is made from rice flour so it's not too dense when it's in my stomach. The texture is springy and not too dense, maybe that's why I like these noodles. I like to process these noodles into fried noodles which are dry and don't have any water at all. Usually I consume Tiaw noodles from my wife's cooking. Starting from very simple and very complicated recipes, he knows how to process them, but today it is different because I will process it myself and with my own hands and of course from my own recipe, not from my wife's recipe.
and to make my recipe a success this time I will add one ingredient that is on my page, namely spinach. The spinach that I picked grows wild and grows abundantly in front of my house. Usually I find bean sprouts or green mustard greens in my fried noodles, but because these types of vegetables are not available in my house, I replace them with spinach which is abundant in the yard.
To make this recipe I need several basic ingredients, namely:
- 500 grams of tiaw noodles
- 2-3 red onions
- 2 cloves of garlic
- 2-3 chili seeds
- 1 Tomato
- Celery leaves
- 1 spoon of sweet soy sauce
- Salt to taste, approximately ¼ tablespoon
- Pepper to taste
- Spinach (here I only use a few spinach stalks and I only use the leaves so they cook quickly during the cooking process.)
How to make :
1. The first step is to pick spinach, I only use the leaves, then I wash them so that no dirt sticks to the spinach leaves.
2. Then I crushed the shallots, garlic and chilies
3. Meanwhile, I just roughly chopped the tomatoes along with the celery leaves which I chopped finely
4. After that, I heated up a little vegetable oil to sauté the spices that I had ground earlier
5. After the ground spices that I sauteed are fragrant, the next step is to add the spinach and I sauté until wilted
6. Then after that I added just a little salt and white pepper
7. Then I added the tiaw noodles, stirred briefly and added soy sauce to it. Stir until all the ingredients are mixed evenly and you can correct what is missing and if you want you can add whatever flavoring you want.
8. The tiaw noodles are cooked and ready to be enjoyed, eat them while the tiaw noodles are warm.
And if anyone asks why I don't use soy sauce or oyster sauce the answer is that I don't like them. Everyone has the right to have their own recipe for themselves as long as it is normal and does not harm other people of course.
