Hello everyone who loves vegan cuisine with savory and sweet flavors. today I will share a traditional recipe from Indonesia, namely yellow sticky rice without coconut milk. Indonesian traditional people who are Muslim have a custom to make food in the form of yellow sticky rice when their children finish reading the holy book of the Alquran. As our gratitude because the children have finished reading the holy book, we usually distribute yellow sticky rice to relatives.
There are two ways to cook yellow sticky rice, namely by using coconut milk and not using coconut milk. today I will cook yellow sticky rice without coconut milk.I will look for turmeric rhizome in the garden as the main ingredient for making yellow sticky rice.
I prefer to use turmeric rhizome rather than turmeric powder bought in the market, besides the taste is fatter, of course it is also natural, so I don't have to worry about artificial coloring that is widely found in the turmeric powder we buy
I made 35 portions of yellow sticky rice which I will give to relatives,the ingredients that I use to make yellow sticky rice without coconut milk are :
3 kilograms of glutinous rice
250 grams of rice
1 kilogram of palm sugar
100 grams of sugar
2 tablespoons of salt (separate 1 tablespoon)
grated coconut from 4 coconuts (take the white part)
pandan leaves (if you don't have one you can replace it with vanilla powder)
I added regular rice because I don't use coconut milk, so that the sticky rice doesn't stick when cooked
Preparation
1.Put the glutinous rice into a large bowl
2.Add rice to a bowl of glutinous rice, stir to mix well
3.Peel the turmeric skin, then put the turmeric into a blender
4.add water to the limit of the blender, then blend the turmeric until smooth, then strain the mashed turmeric
5.Enter the turmeric juice that has been filtered into the glutinous rice.
6.We put the turmeric dregs back into the blender, add water to the limit of the blender, blend again, then strain the turmeric, take the turmeric juice, put it in the glutinous rice, repeat until all the glutinous rice is submerged in the turmeric juice. Soak the glutinous rice with turmeric juice for 1 hour.Don't forget to add 1 tablespoon of salt so that the yellow sticky rice tastes more delicious.
7.Before cooking the glutinous rice, we boil 2 liters of water to flush the glutinous rice when it is cooked, because I don't use coconut milk, I immediately steamed the glutinous rice with a steamer.
How to cook yellow sticky rice are :
1.put the glutinous rice into the steamer pot and then steam it, don't forget to put enough water into the steamer pot.
2.after 10 minutes,flush the top of the steamed glutinous rice with the water that we previously boiled,do this every 10 minutes until the cooking water runs out (I watered it 3 times until the glutinous rice was cooked).steamed until the yellow sticky rice is cooked, it took me 40 minutes to steam it on medium heat
Tips :don't water the glutinous rice too often, because it will cause the yellow sticky rice to become mushy and crumble, from the 2 liters of water we boiled before, we divide it into 3 to water the glutinous rice 3 times
Time to make sweet and savory coconut core :
1.Thinly slice the palm sugar
2.Put the sugar and a tablespoon of salt into the pan, cook until it melts.
3.add palm sugar to the pan,boil until the palm sugar melts.
4.add pandan leaves or vanilla powder.
5.Enter the grated coconut into the pan containing the melted palm sugar, stir until all the grated coconut is mixed with palm sugar,cook until the water content decreases and the coconut kernel becomes slightly dry.
6.let's unite the cooked yellow sticky rice with coconut core (grated coconut cooked with palm sugar)
