The past few days the weather is scorching hot, although the occasional light rain falls but can't get rid of the heat caused by the scorching sun. at this time of weather I want to enjoy a bowl of fresh, spicy and sweet dishes, it would be better if it came from fruits that contain lots of water. I will make pickled cucumber that is spicy, sweet but fresh to deal with the hot weather.
Cucumber is one of the fruits that contains a lot of water and tastes fresh when eaten in hot weather, that's why I chose cucumber to make pickled fruit during hot weather like this.
The ingredients that I use to make pickled cucumber are :
The first ingredient consists of:
1 kg cucumber (choose young so it tastes fresh and sweet)
1 L water
1 tablespoon salt
The second ingredient consists of:
1 liter of hot water
1 tablespoon salt
100 grams of sugar
8 red chilies (add more if you like it super spicy)
1 tablespoon vinegar
How to make it we start from the second material to save time making it.
The first step: put the salt into the hot water, then stir until the salt dissolves into the hot water.
The second step: put sugar into hot water containing salt and stir until the sugar dissolves into hot water.
The third step: add a tablespoon of vinegar into the sugar solution and stir so that the vinegar is evenly mixed.
We leave it until the sugar solution cools down. Next we will work on the ingredients in the first part (there are cucumber, water and salt).

The second step: wash the cucumber until clean then cut it into two parts.
third step: then cut the cucumber back into sixteen pieces.
The fourth step: put the cucumber pieces into the salt water (the purpose of soaking the cucumber with salt water so that the sap contained in the cucumber is reduced, when the cucumber is young and freshly harvested there is usually a lot of sap in the fruit).

The fifth step : Next we will thinly slice the red chilies, then we will feel whether the sugar water has cooled down, when the sugar water has cooled we can put the pieces of red chili into the sugar water.
The sixth step: it's time to unite the cucumber and the sugar solution.

The seventh step: put the pickled cucumber into the refrigerator for about two hours so that the marinade seeps into the cucumber, we use a container that has a lid so that the pickled cucumber is perfectly mixed with the seasoning.
waiting for the pickled cucumber to be ready, I will pick up my child from school, so that I can enjoy the spicy, sweet and fresh pickled cucumber with my son, rais. he really likes my pickles.
After about two hours I keep it in the refrigerator, notice the color of the cucumber is getting greener.
