I hope you are always healthy, so you can be creative with various Vegan cooking menus.Food is one of the identities of a nation or even an ethnic group, by looking at a food menu or by tasting a dish, we can find out the origin of the food. For example, in Indonesia there are various menus of typical dishes from various ethnic groups, the Minang tribe from West Sumatra is synonymous with spicy dishes, the Javanese are synonymous with sweet dishes, the Malays are synonymous with fatty dishes and there are many more dishes that can become the identity of an ethnic group. Today I will share a vegan dish that is synonymous with the Javanese tribe, namely semur /stew.
Semur/stew is a food menu that has a sweet taste, typical of the Javanese tribe. The sweet taste obtained from stew dishes comes from sweet soy sauce and brown sugar. Today I will cook potato stew with yellow tofu.
I used yellow tofu in this stew because yellow tofu has a chewier and denser texture than other types of tofu. I also don't fry the yellow tofu, I want to reduce the use of cooking oil in this stew. This stew, which is synonymous with sweet taste, uses a lot of various spices which also have a sweet taste. I used cinnamon, star anise, cloves and cardamom to enhance the sweet taste. Meanwhile, I use ground pepper, nutmeg, garlic, shallots, chili ticks and candlenuts to strengthen the spicy taste in stews.
The ingredients
The ingredients used to make potato stew and yellow tofu are :
300 grams of potatoes (I used red potatoes)
5 yellow tofu
5 cloves of garlic
3 cloves of red onion
5 chilies ticks
2 candlenuts
1 nutmeg
1 tomato
1/2 cinnamon stick
1 star anise
2 cardamom
1 tablespoon coriander
1 teaspoon tamarind
5 cloves
100 mL sweet soy sauce
500 mL water
1 pack ground pepper
1 teaspoon salt
75 mL cooking oil
Preparation
1.Peel the potato skin.
2.Wash the potatoes clean.
3.Cut the potatoes into pieces.
4.Cut the yellow tofu into several pieces, I cut it into cubes.
5.Peel the skin of the shallots, for the garlic I have peeled the skin.
6.Crack the nutmeg skin and take out the seeds.
7.Wash the garlic, shallots, cinnamon,coriander, candlenuts, nutmeg, star anise, cardamom and cloves.
8.Puree the garlic, shallots, coriander, candlenuts, nutmeg, star anise, cardamom, cloves and salt. Add salt when grinding the spices, adding salt will also make the coriander more fragrant. I still use a pestle and mortar to grind the spices.
9.Wash the tomatoes and tick peppers then cut the tomatoes and tick peppers into several pieces.
How to cook
1.Heat cooking oil, but not too hot.
2.Add the ground spices, saute the ground spices until fragrant.
3.Add the tomato pieces and chilies ticks, saute until wilted.
4.Add the yellow tofu pieces, stir so that the spices are even and absorbed into the yellow tofu.
5.Add potato pieces.
6.Add water.
7.Add ground pepper according to our taste.
8.Add sweet soy sauce.
9.Cook until the potatoes are soft, then turn off the stove.
The result
Sweet and spicy potato and yellow tofu stew is ready to be served.The taste of spices is very pronounced on the tongue and seeps into the pieces of potato and yellow tofu.
