Hello friends who love raw chili sauce, today I will share one of my family's favorite chili recipes, namely pineapple chili sauce. Pineapple chili sauce is a type of chili sauce that is rich in taste, it has a spicy, sour, sweet and distinctive pineapple taste. Pineapple chili sauce, as the name suggests, this chili sauce is made from the main ingredient pineapple. To give a fresh sour taste to pineapple chili sauce, use pineapple that has a sour taste, usually unripe pineapple has a more sour taste than pineapple that is old and ripe.
The taste of pineapple chili sauce is not completely sour, because I added a little palm sugar. If you don't have palm sugar, you can use brown sugar. The sweet taste of palm sugar will give a slight taste sensation to the sour and spicy pineapple chili sauce, thus creating a rich-tasting chili sauce. I also use green tomatoes, green tomatoes have less water content and taste fresher than ripe tomatoes. The fresh taste of pineapple plus the sweetness of palm sugar and savory green tomatoes will create a delicious raw chili sauce.
The ingredients
The ingredients I use to make pineapple chili sauce are :
1/2 part pineapple
10 Cayenne pepper
5 red chilies
5 cloves of garlic
3 cloves of red onion
1 green tomato
1 teaspoon salt
a little palm sugar/brown sugar
400 mL hot water
Preparation
So that the taste of the chili sauce tastes fresher, I will prepare the ingredients first in several orders, namely :
1.Wash the garlic, shallots, cayenne pepper, red chilies and tomatoes. Previously I had removed the stalks of cayenne pepper and red chili, I had also peeled the skin of the garlic and shallots.
2.Put the garlic, shallots and red chilies into hot water, soak until the water becomes warm (the water temperature is close to room temperature).
3.Discard the two ends of the pineapple, then wash the pineapple, I didn't throw away the skin, because I used the pineapple skin as the sauce.
4.Cut the pineapple into two parts.
5.Put a square mark on the flesh of the pineapple, this is to make it easier for us so that the skin of the pineapple is not damaged.
6.Then I cut the pineapple into cubes, these pieces were only on the surface of the pineapple and did not reach the bottom of the pineapple, so as not to damage the skin.
7.Take the flesh of the pineapple, I use a spoon carefully.
Now I have a pineapple peel bowl.
8.Cut green tomatoes into pieces.
9.Cut the cayenne pepper into several pieces.
10.Cut the garlic, shallots and red chilies into two parts, this makes it easier for us to chop the ingredients.
How to make pineapple chili sauce
1.Put the pineapple flesh, red chilies, shallots and garlic into a blender.
2.Add salt and palm sugar to the blender.
3.Add chopped green tomatoes to the blender.
4.Coarsely chop all the ingredients.
5.Put the pineapple chili sauce into a bowl of pineapple skin, the aroma of garlic and pineapple is very pronounced.
Serving method
Add chopped cayenne pepper on top of the pineapple sauce.This pineapple chili sauce can be enjoyed with various fresh vegetables, tempeh and fried tofu.
