hello vegan lovers, Chayote is a vegetable that is rich in vitamins such as vitamin C, K, B3, B9 and is also rich in minerals such as zinc, copper and phosphorus. Therefore consuming raw chayote can provide benefits for the body. Chayote is rarely consumed raw, this is because the fruit contains a lot of sap, if consumed raw, the sap can cause itching on the lips. Today I will share tips on how to process chayote so that it can be eaten raw, I will process chayote into delicious fresh pickles.
To make pickled chayote, I will use young chayote, young chayote contains less sap than old chayote. The chayote that I use is a small chayote, this chayote is smaller than the other types of chayote. The taste of the fruit is also sweeter and fresher than the large chayote.
To remove the sap from the chayote, I use coarse salt, coarse salt can speed up the process of removing sap from the chayote.
**The ingredients **
The ingredients that I use to make pickled chayote are :
500 grams of chayote
3 tablespoons of coarse salt
1/2 tablespoon of fine salt
1 tablespoons of sugar
5 red chilies
2 cloves of garlic
1 tablespoons of vinegar
200 mL hot water
How to Make Pickled Chayote
Before processing the chayote into fresh pickles, I will process the chayote, so that the sap disappears. The trick is to split the chayote in half, try to split it into two parts, this is to make it easier for us to remove the seeds.
Dispose of seeds located in the middle of the fruit, in young chayote, the seeds are still soft, so it's easy to throw away. The seeds must be discarded to clean, so that the sense of pickled is not bitter.
After that, cut the chayote into several pieces, cut according to taste, the size is not too big and not too small.
Sprinkle coarse salt into the chayote pieces, squeeze the chayote pieces, so that the sap comes out, but don't let the chayote pieces break.
Allow 30 minutes for the sap to come out or until the Chayote pieces are wilted.
While waiting for the sap to disappear, I will process the seasoning. Wash the red chilies and garlic.
Small chop the garlic and red chilies.
Put fine salt and sugar into hot water, use hot water with a temperature of 70-80 degrees Celsius.
Add the pieces of red chilies and garlic to the hot water containing a solution of sugar and salt.
Add vinegar.
Stir all the seasoning ingredients until well blended, let stand until the solution is warm/around 30 degrees Celsius.
Now I will see if the chayote pieces have reduced their sap level, if the chayote starts to wilt, then wash it with running water, repeat washing until the chayote pieces are free from coarse salt.
After being washed clean, there is no more coarse salt attached to the chayote.
Serving method
Place the chayote pieces on a bowl or serving plate.
Mix the salt solution into the chayote pieces.
The Results
Pickled Chayote with a fresh taste, a little spicy and salty, ready to be enjoyed. When bitten, the chayote pieces are crunchy and taste amazing.
