Hello Vegan lovers, hot weather usually makes us want to drink a lot, usually the drinks consumed are cold drinks. like today's hot weather conditions make me want to eat foods that contain lots of water, I want to eat something spicy and a little sour that will make the food taste on the tongue. But I don't know what menu I will cook today.
after work I took the time to stop at the convenience store, I saw a lot of Enoki mushrooms lined the shelves, I smiled to myself and imagined I would cook enoki mushrooms with a lot of spicy and slightly sour sauce. I bought 2 packs of enoki mushrooms measuring 100 grams at a price of USD.0,5.
I also bought medium-sized white tofu, I will make tofu soup with enoki mushrooms with a spicy and slightly sour sauce. Enoki mushrooms have a soft texture with a fresh taste and are slightly fatty, therefore Enoki mushrooms are suitable to be added to soupy dishes.
The ingredients I need to make Enoki mushroom tofu which tastes spicy and sour are:
100 grams of fresh enoki mushrooms (If there are no enoki mushrooms, we can replace them with other mushrooms)
10 medium-sized white tofu
100 grams cabbage
The spices that I use for the seasoning are:
3 cloves of garlic
2 cloves of shallot
3 candlenuts
5 red chilies
1 large tomato
1 tablespoon salt
1 teaspoon sugar
2 tablespoons vinegar
1 packet of ground pepper
1200 mL of water (I use a lot of water because I like soupy foods)
how to cook spicy and sour enoki mushroom tofu soup is:
1.put water in a pot and boil until hot.
2.peel the skin of the onion and garlic, then wash the onion, garlic, red chili, candlenut and tomato, then blend until all ingredients are smooth.
3.enter the spices that have been mashed into a pot of hot water, then boil until boiling.
4.wash the cabbage and cut it according to your taste then put it in a pot of seasoned water,cook until the cabbage is wilted.
5.cut the tofu into quarters and put it in a pot of seasoned water,cook until the tofu becomes fat and floats.
6.add salt and sugar to cooking.
7.remove the brown cobs, then cut the enoki mushrooms in half (if you like, you can cook them large without cutting them), add the enoki mushrooms to a pot of seasoned water,then stir and cook until the enoki mushrooms become wilted.
8.after the enoki mushrooms wilt then add vinegar.
9.add the ground pepper and stir until well blended and there are no lumps of pepper.
serve a bowl of enoki mushroom tofu soup with warm rice, because the soup is not spicy enough, I add red chili pieces on top of the soup.
hmmmh delicious, my body warms up after eating the soup and my bloated stomach becomes normal, the spicy and sour sauce makes my appetite increase,friends can add spring onions to the soup if you like it.
