It was on a hot Wednesday afternoon I and my sister decided to visit a friend for something very important.
But she had nothing to offer us as her visitors except for some uncooked plantain ,
"What can we do with the uncooked plantain because we aren't going to eat it raw and we are definitely not taking it home" we thought among ourselves
One of my sisters suggested we roast the plantain in a traditional way and eat it with a traditional sauce.
The idea was awesome and we decided to start immediately.
We requested for some firewood, kerosene and matches which she provided, at first she thought we were joking until we started arranging the firewoods and lighting the fire,
she was happy to see that we felt at home at her place.
We requested for some ingredients which are>
Ingredients and quantity required

It was just for the three of us and the plantain was meant to finish in one goal.
All the ingredients was just for the three of us to finish at once.
I placed the plantains directly on the burning fire together with the peel s to roast for sometime (people say that roasting plantain or yam with the peels makes the taste unique) , these process took about 15 minutes and I had to turn it constantly to avoid eating burnt plantains.
The smoke from the fire Kept disturbing my eyes but I enjoyed the process.
It reminded me of those days when we used to cook with firewood , my mum used to tell me that foods prepared with firewoods comes out very sweet than other means of cooking but I don't know if that theory is true or not , all I knew was that the process was tedious .
After some time our plantain was ready and I removed the peel, cut the plantain into chewable sizes and Set aside.
Now is time to prepare the local sauce
I learnt how to prepare these sauce from my father who was a diabetic patient, he nicknamed it vitamin A but the only difference was that he adds tomatoes and not scent leaf to his own sauce but not withstanding these particular sauce is really tasty and nice .
The local sauce is very easy to prepare, and here are the process
🌻 Pour some red oil (fresh palm oil ) to your plate preferably stainless plate
🌻 Cut your onions into cubes and add
🌻 Add your salt and black pepper
🌻 Add the scent leaf and stir
🌻 place the plate on the fire to heat up a little just about 3minutes
🌻your local sauce is ready
Note: everything was added to the plate before placing the plate on the fire .
The roasted plantain and sauce did make a lot of sense and as well brought back old memories.
Believe me these is nice and you should try it someday.
