Let’s make some oil-free tofu scramble!
Grab a block of extra firm tofu, and with a bowl, add in the block and the water, and squeeze it together with your hands. Add it into a saucepan and turn the temperature up to medium. Shake it a little bit, you don’t want to actually stir it.
We’re going to use two tablespoons of nutritional yeast. Add that in for a cheesy flavor. Two teaspoons of turmeric, and two teaspoons of onion powder as well. Now we’re going to fold it over with a spatula. Again, we’re not going to mix it together. That helps it keep its form. We’re just going to shake it like this. Measure out a half a cup of almond milk and add that to the tofu, and fold that over with the spatula.
Then reduce the heat just a little and set the timer for six minutes. Let that baby cook! And now we’re going to add some pepper right on top for a little extra seasoning. Now we are good to go, prepped and ready. Add it to some Tupperware, and you’ve got five half cup servings of tofu scramble prepped for the week.
