Cooking for friends is always a present experience, and simple dishes are always better with beer.
Sunday dinner was exactly that. About 800grams of chuck steak, couple of carrots, a few onions and a couple of garlic cloves. The magic ingredient, 1 litre of SingleSpeed Imperial Stout from the Turning Wheels craft brewery in Cebu City.
SingleSpeed is a strong stout around 10% for me it's got some great black treacle overtones and is very drinkable and dangerous as I've found on a few occasions.
Anyway cut the beef into cubes dust with a little flour and dried mixed herbs. Heat some olive oil in a pan, brown the beef off and put the chunks in a large saucepan. Slice the onions, crush the garlic and dice the carrots, fry them in a little oil till the onions start to soften then put them in the saucepan with the beef. Add a couple of bay leaves, and pore on the SingleSpeed, save a small glass for the chef.
Turn the heat up a bit, smells amazing, simmer for a couple of hours until the liquid starts to thicken.
Serve with mash potato's and some greens and the glass of SingleSpeed you saved. Your friends can buy their own beer ;).
