Hello, guys! So for today’s blog, we’re cooking "Paksiw".
Yesterday was my niece’s birthday—she just turned two—and her dad prepared a little celebration for her. They had "inasal", and honestly, I thought it was just a joke at first, guys 😂 But it turned out to be real, and yes, the birthday girl actually got to eat inasal too!
So after the inasal, of course there were leftovers because they didn’t have many visitors. My mom immediately had an idea because this is my father’s favorite. The pig’s head was cooked into "paksiw" by my dad. This is also what I love, guys—whenever there’s a birthday and they serve inasal, the next day there’s always paksiw. And wow, paksiw is really delicious, especially when all the spices are complete.
My dad cooked it—he’s really the chef of our house. He cooks so well, honestly. This is probably one of the reasons my mom fell in love with him… his chef skills 😂
So here it is, guys—the pig’s head. It already looks so delicious! Especially since it was grilled first, the skin was really chewy and crispy, but once it’s cooked into paksiw—oh my goodness—it becomes so tasty too.
You can see my dad slicing the pork, preparing it for paksiw. He was super focused because he was already hungry at that time. He was really craving paksiw since he didn’t get to eat the inasal yesterday, so this was his payback meal.
Then we added "lemongrass" to make it more fragrant and flavorful. We just let it simmer slowly, mixing in my dad’s special paksiw style.
And there it is, sitting right in the middle of the pot—the paksiw cooked by our chef at home. Of course, we were already ready to eat because my dad had started. The smell of the paksiw was so good, we couldn’t resist, so we ate right away without waiting long.
And this is my plate of paksiw. See? It looks so delicious. The paksiw pig’s head was insanely good.
