Today, I decided to cook one of my all-time favorite viands: Pork Adobo. It’s the kind of dish that never fails to bring me comfort, especially on days when life feels heavy. I made it for lunch, and of course, I saved the leftovers for dinner.
But here’s the twist. I separated the adobo meat and sauce, then tossed the white rice into the pan. The result? Adobo Rice. Simple, flavorful, and perfect for a stress-eating day. Honestly, it felt like I was giving myself a warm hug with every bite.
Life lately has been tough. Even though my family is far from me, I can feel their struggles too. It’s hard not to carry those emotions, but cooking something familiar like adobo helps me cope. It’s more than just food. It’s a reminder of home, resilience, and love.
