I decided I wanted to write a "proper" post yesterday, but it really was a case of the spirit being willing - sort of - and the rest, well. Not. I'm tired. I'm not sure if it's of the "hurry-up-and-wait" which is not quite over, the RL village shenanigans that are still happening or the waning moon. It doesn't really matter. I. Am. Tired. Anyhow, when I realised I wasn't going to be any more productive, I headed to my other happy place: the kitchen.
Although last night's supper was Weber roast chicken, we both agreed that heroes of the meal were the fruit and vegetables.
First, the carrots were par boiled with a quartered orange, a few cloves of garlic (in their skins) and sprig of rosemary. Then, still hot, I tossed them into a baking pan with a knob of butter and some olive oil, and the garlic. I squeezed the hot orange juice over that and sprinkled a pinch of salt over it all.
That went into a hot oven for about half an hour and then allowed to cool to room temperature. Before serving, squeezed out the garlic and tossed the lot onto a platter and sprinkled liberally with a handful of chopped parsely.
The green beans (from Cecil) were cooked until just al dente and then drained and cooled a bit with cold water and to retain a bit of the crunch. I dressed them - still warm - in my sort of famous homemade vinaigrette.
Finally, the fruit salad dessert: strawberries from our garden, pawpaw from a friend's garden with a dollop of my blueberry jam for both berries and a little sweetness. I layered that in glasses with SY's fabulous yoghurt.
It was a good end to Sunday, and I hope, a good start to the week.
