Since it is freezing outside, I am happy to be inside catching up. I just finished checking on the batches of tonic and thought I would show you guys how they are looking at 3 weeks.

Happy ferments
Except for the children's tonic, the colours have changed drastically as the acv leeches the roots, herbs and fruit into the tonic.

And finally the Kinder Cider with cranberries, calendula and thyme added. The cranberries are totally lacking colour now.

Only 21 more days until straining and bottling. I will also be dehydrating the pulp and grinding for spice at that time. Part 4 will be exciting!
