The tonics are now prepared and ready for weights to keep everything submerged, then will be put in a cool dark cupboard to rest for 4-6 weeks. I open and stir daily during the fermenting period a few times a day.
This batch is traditional with basic ingredients and lots of pepper. You can see the bubbles starting!
This gorgeous tonic I call Kinder Cider Tonic. Start with the traditional recipe, but I add oranges, lemons, cranberries, thyme and calendula petals.

So this tonic will have extra benefits like cranberries antioxidants, urinary tract and kidney support, Vit C, Vit K and maganese. Calendula's powerful anti inflammatory properties make it a potent addition for ear infections, ulcers, sore throats and more. The addition of thyme for stomach support, arthritis, sore throat, cough, bronchitis and more.
As well, these make the flavours so much more mellow, more tollerable for some people!
This beauty is bright and tangy, a must for the kids in your household!
Not only is it the most beautiful ruby red, but it tatses good!
All amounts of the original 7 are reduced, and added are ceylon cinnamon for extra antioxidants, anti inflammatory, heart protection, fights infections and viruses and has Vit K, calcium and iron. Extra Rosemary for its ability to improve cognitive activity and overall improvement of all the body's organ systems.
Also added are thyme, cranberries and beets for colour and flavour.
I hope this wasn't to long! In a few weeks i will post when i strain and bottle (adding honey at that point) and dehydrate all of the pulp to make spices!
