American Guinea Hog: PORK RECAP - How was the Flavor? How Much Yield?
We have been raising an old heritage breed pig here on our farm called, the american guinea hog, going on 2 years now. And we finally got our first one back from the processor.
It was a one year old male(boar) pig & since it was a heritage breed pig, it took around 1 year to get it up to weight. He weighed 167 pounds, which I was very happy with, bc I actually thought the pig was smaller than that. Since the American Guinea Hog is a small breed of pig, a full size 2 year old boar American Guinea Hog will top out around 300-350lbs in size, & a female will weigh around 200-250lbs. So I was very happy with how this one turned out.
Now since we do not have our butcher shop up & going, we had to take the first one to the closest processor, which is about an hour away, & there is at least a 3 month waiting period too, but hopefully this will be the last one we will have to take to a processor, fingers crossed.
Now, I am not for sure how much weight in return we got back, bc the processor does not tell you that, & I did not really want to weigh every single package either, but this is the quantity of packages we got from the American Guinea Hog:
12 (6 Pack)-Pork Chops
20 Packages of Suasage
16 Packs of Bacon
2 Large Pork Roast
2 Large Hams(1 halved)
2 Small Packs of Spare Ribs
3 Packs of neck
1 Large Bag of Leaf Lard
1 Pack of Pork Liver
And I must say, I really was impressed with how much pork it yielded! Very impressed. I knew that the guinea hog is a small breed of pig, & and anticipated smaller portions of pork.
Now the flavor...This was the main thing that I was really curious about, was how did the pork actually taste? We had the pork chops first, while small, they were not as small as I initially thought, but what it may have lacked in size, compared to a typical pork chop, it made up for it in flavor, bc these pork chops were absolutely amazing! The texture, and the tenderness, & how moist the pork chops were just blew me away! The pork literally melts in your mouth, & I am not just saying that either. The pork chops were just as tender as a ribeye steak. Now as for the bacon, it, much like the pork chops, was really really delicious, & it too just melted in your mouth, & it has to be bc of all that great fat & lard that is marbled all in the meat. The pork roast was also amazing. Just lots & lots of great flavor. The sausage was good, it was not mind blowing like the pork chops & bacon, but it was really good, & when we cook the hams, I will let everyone know how it turns out as well.
But we were really impressed how the pork turned out. We were very happy with the yield, & we were extremely happy with the flavor. And absolutely without hesitation, I would recommend the American Guinea Hog to anyone!!!
