Wednesday was a total washout. I was too exhausted when I got up and spent the day sleeping or reading. I tried to work on bills/budget but couldn’t manage it. It was a gorgeous day, cool and partly sunny, but…
Thursday was cold, only in the 40’s during the night, when I got up. I decided to work on the bills/budget and finally got July and August done, plus got a head start on September. Once that was done I got a load in the dishwasher and cleaned up the kitchen.
My helper friend would be here at noon and I’d planned to make more zucchini fritters.
He got the 2 biggest zucchinis grated up and salted. He got nearly 2 cups of liquid out of them. Now we have the system down pat, we made 3 double batches and ended up with 11 meals, 10 went to the freezer. I’d planned to have 1 for supper.
There were still a couple small zucchini left so he decided to make fried zucchini slices. I needed a protein so he made egg salad out of the remaining eggs. It was a delicious supper!
I was very tired, as I always am after the long day that Thursdays always are. I watched Big Bang Theory until my 8PM bedtime.
On Friday, he’s doing a big shopping for me. I have the kitchen to clean up and I’m thinking of making tomato soup base for the freezer if we have time. It’s supposed to rain off and on all day.
This weekend is another “anniversary”, it’s Labor Day weekend and when we had my husband’s memorial. So I’m not doing so well, at best.
