Sooo, today the recipe is this!
Reaaaaally simple, and, quite awesome!
First, get some tender loins, not sure this is the correct name in english, here we call them "Lombinhos", and ask the butcher to open them up, so they can be rolled over, after!
Season it, as it was meat to be hoven roasted normally!
Salt, Bay leaves, meat cube, pepper, pepper crust (?) (massa de pimentão!), olive oil, white wine, garlic...I think its all,.. :D
After that, start putting on top whatever you are stuffing it with! In this case, ham, and cheese!
Roll them over carefully, and place them on a tray that fits the hoven! Laying them on top of a coat of the seasoning! You can, secure it with toothpicks, in this case, I didn´t!
So now, for the potatoes!
The correct choise of potatoes is important, as they must hold the time for the meat to be roasted, and not "melt"!
I find these here, quite good, just given them a rinse with water, and spray some rock salt on top, and add them around the meat!
Annnnnnd there you go!
Around 45 mins at 180ºc should do, depending on how strong your hove is, keep an eye on it and correct the time if needed.
It will get a LOT of water on the bottom, as the meat cooks. Don´t worry, and don´t take it out! Eventually it will dry a bit.
