Ethereum, NEO, EOS and several others I'm not too familiar with are Smart Contract enabling software platforms that use a native token as a utility to access and use the software.
Many other tokens like Kucoin, COSS, Rialto, Veritaseum, SALT, Populous are more akin to companies that either use the tokens to perform some income generating action or the token is a means of automatically accounting and distributing profits generated by the company. These have more in common with stocks or shares in traditional markets than money, although they all move over blockchains.

It's hard to say which one is best, they all do things differently so it's more a matter of finding ones you understand and are confident in the business model.
